Back in my childhood my mother made a chocolate cake that even I would eat. All who know me know that I don't really like chocolate very much.
I remember she would plan it so that it would come out of the oven about the time we finished eating supper (yes, we ate breakfast, dinner & supper instead of breakfast, lunch & dinner) Dad liked it warm with a little butter on it, no icying.
Chocolate Mayo Cake
1/2 cup cocoa
3/4 cup mayo
2 cups flour
1-1/2 teaspoons soda
1/4 teaspoon salt
3/4 cup sugar
1 teaspoon vanilla
1 cup cold water
Cream the sugar and mayo together. Put the cocoa, flour, soda and salt together in the sifter. Add the dry ingredients to the creamed ingredients alternating with the water and vanilla. Bake in a 9X13in. pan at 350 degrees for about 25 min.
Mom cooked at almost 9000 ft. high so you may need to adjust for a lower altitude.
